Easy Pav Bhaji Recipe

  • 2 cup carrot
  • 1 cup cauliflower
  • 1 cup broccoli (optional)
  • 1-1.5 cup green peas (fresh or frozen)
  • 1 cup beetroot (optional)
  • 1 cup butternut squash (optional)
  • 2 cup potato
  • 1 tbsp oil
  • 4 tbsp butter
  • 1 nos onion finely chopped
  • 1/4 cup green capsicum finely chopped
  • 1/4 cup red bell pepper finely chopped
  • 2-3 green chillies (finely chopped)
  • 1 inch ginger (finely chopped)
  • 1.5 cup tomato (chopped)
  • to taste salt
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp fennel powder
  • ½ tsp red chilli powder
  • --- Either
  • 1 tbsp pav bhaji masala (optional)
  • --- Or
  • ¼ tsp garam masala power
  • 4 tbsp chopped coriander (cilantro)
  • 2-3 tbsp lemon juice
  • --- for serving
  • 8-10 pav (bread rolls)

How to make Easy Pav Bhaji

  1. Step-1

    In a Pressure cooker add roughly chopped carrots, potatoes, cauliflower, broccoli, pea, butternut squash and beetroots. Add salt, turmeric powder and ½ cup water.

    Now open the pressure cooker and mash the vegetables with the help of a masher or ladle.

    Heat a pan and add a tablespoon of oil followed by butter to prevent butter from burning. Once hot add cumin seeds.

    Add capsicum and bell pepper and cook on medium heat until the onions are cooked well.

    Now add tomatoes, green chillies and salt. Mix it well, cover and cook on medium heat until tomatoes are tender.

    Mash the tomatoes and add spices. You may also add some kasoori methi at this point. Mix well and cover again on low heat for 1-2 minutes.

    Once the masala is cooked well it will start releasing the oil, at this point add the mashed vegetables and continue cooking on medium heat. Mash well all the veggies and cook for 7-8 minutes.

    Add water to adjust the consistency of bhaji. Cover and cook on medium heat for another 5 minutes.

    Sprinkle a pinch of garam masala and sugar at the end. Finish with some butter and freshly chopped coriander leaves.

    Switch off the heat and add lemon juice. Bhaji is ready to be served, lets prepare the pav now.

    Slit the pav in the middle. Heat a pan or tawa and add 2 tablespoon of butter and fresh coriander. Place the pav on it and cook on medium heat until it is golden.

    Apply butter and coriander leaves on the other side.

Notes: 

  • You can aujust the spices according to your liking.
  • You can skip the butter if you want, but butter gives a very nice flavour to this.
  • You can use red pumpkin in place of butternut squash if you cant find it.
  • Always add lemon juice after switching off the gas.
