Nankhatai is delicious, light, fluffy and melt in mouth eggless indian cookie. It is sometimes called as indian shortbread cookies or biscuit. These eggless indian biscuits are made using only few basic ingredients that makes it so simple and easy to prepare. These generally have a classic cardamom or nutmeg flavour.

Nankhatai is one of my favourite childhood snacks. I grew up eating this delicious teatime treat. You can find these traditional cookies in almost every bakery shop in india, so you can imagine its popularity in all over india and pakistan since very long time.

My hometown is famous for its incredibly delicious melt in mouth nankhatai and these are prepared there particularly in summer season. You will find these everywhere from may to august there and the reason behind this is because this is the season when the ghee is in melted state at room temperature as the temperature is above 35 degrees, so it results in softer texture and will just melt away in your mouth.

However, you can enjoy these anytime in the year, but its worth trying in summer to feel the real yumminess.

This is a straightforward recipe that does not need any special technique.

If you are a fan of nakatani like me, then you can easily make these at home. Just make them in bulk and store in an airtight container, these will stay good for the next couple of days.

It is one of the recipes which looks so appealing inspite of being so simple. This beautiful red color catches everyone’s eyes. Adding nuts gives the dish a nice crunch.

I have already shared the recipe of harabhara poha (green masala poha) on my website. These are not only healthy but also attractive, my kids love it too with the lovely vibrant colors. You can even add some more color by adding some pomegranate seeds on top or some sweet corns which gives a nice contrast and interest.

It can be enjoyed as a healthy evening snack or a morning breakfast. It is nutritious and filling either way.

Usually, papdi chaat is made with plain flour and deep fried pooris but to make it healthier i used whole wheat flour and baked these instead of deep frying. So you can enjoy this healthy papdi chaat as much as you like.

If you follow the recipe correctly it gives you perfectly flaky texture. And you will get perfectly crisp papdi even without frying, so it saves you a lot of time as well.

These papdis will stay good for up to a week or two in an airtight container. You can make the chaat whenever you like. You can also make bhalla papdi chaat using the same papdis.

In papdi chaat, papdis (flour crispies) are topped with boiled chickpeas, potatoes, yogurt and last but not the least chutneys are added. You can also use boondi. Soak the boondis in water and then squeeze the water from the boondis. Add these to the papdi chaat.

This lip smacking snack has all the flavours in one bite – spicy, tangy, and sweet. To make the papdi chaat even more healthy and nutritious you can top it up with some sprouts also.
