Beetroot kanji is a traditional indian fermented drink that is made from beetroots, water, and a blend of spices. It is a popular summer drink that is known for its refreshing taste and numerous health benefits including improved digestion. The drink is a vibrant pink color and has a slightly tangy, sour flavor that is balanced by the sweetness of the beetroots.

It is also rich in antioxidants and vitamins, making it a nutritious addition to any diet. In south india, beetroot kanji is often served as a side dish with rice and other traditional foods, but it can also be enjoyed on its own as a refreshing and healthy drink.
