Panipuri | Khatta Paani | Meetha Paani

In this recipe I will teach you how to make pani for panipuri without panipuri masala.

I will share theeka and meetha paani along with the stuffing (masala).

Panipuri is one of the most Popular street food. Crispy pooris filled with some lip-smacking masala and loaded with tangy and spicy flavourful water, having these is just burst of flavours in your mouth. Almost everyone loves eating panipuris.It is called with different names in different parts like golgappa, puchki, pani ke batashe, phulki, paani patashi or gup chup.

Easy Panipuri Recipe

  • For Theeka paani
  • ½ cup fresh coriander (cilantro)
  • ½ cup mint leaves
  • 3-4 green chillies
  • 1 inch ginger
  • 1 tsp salt
  • 1 tsp black salt (kala namak)
  • 1 tsp chat masala
  • 1 tsp roasted cumin powder
  • ¼ tsp black pepper powder
  • 2-3 tbsp lemon juice
  • 1 tbsp tamarind sauce (imli ki chatni)
  • 400 ml water (cold)
  • Some boondi (optional)
  • For Khatta meetha paani
  • 2 tbsp tamarind (imli) deseeded
  • 2 tbsp jaggery (gur)
  • 2-3 dates deseeded (Khajoor)
  • 1 tsp salt
  • 1 tsp black salt
  • ½ tsp red chilli powder
  • 1 tsp roasted cumin powder
  • 400 ml water (cold)
  • Some boondi (optional)
  • For masala:
  • 1 medium size boiled potato
  • 4 tbsp chick peas/chana
  • 1 tsp chat masala
  • ½ tbsp black salt
  • 2 tbsp theeka paani
 

How to make Easy Panipuri

  1.   In a blender take coriander leaves, mint leaves, green leaves, ginger, along with all spices, lemon juice and tamarind sauce.
  2.   Add some water and blend it to a fine paste.
  3.   Strain and add more water .
  4.   Check the seasoning and adjust if needed. at last add boondi. Theeka paani is ready !
  5.   For making meetha paani:-Soak tamarind , jaggery and dates in hot water for 30 minutes.
  6.   Transfer into a blender and add salt, black salt, chilli powder and cumin powder. Add some water and grind well.
  7.   Strain it and add some chilled water, adjust the seasoning if required.
  8.   Add boondi in the last. Meetha paani is ready !
  9.   For making masaala: Chop boiled potato in small pieces .Add chick peas, onion (if using), chat masala, black salt, green masala and theeka paani.
  10.   Mesh and mix well. Potato masala is ready !
  11.   Enjoy with pooris.
